Recipe of the Month : Chicken Breasts in a Mango Glaze
Ingredients: Butter for the roasting tin 2 tbsps Olive Oil 1 large onion-finely chopped 4oz bacon lardons 4oz spinach – chopped 6 chicken breasts – skins on 2 tbsp smooth mango chutney Parpika
For the sauce: 1oz butter 1 tbsp flour 100ml port 300ml cranberry sauce 2tbsp mango chutney
Method: 1. Heat the oil in a sauté pan, add the onion, fry for a few minutes 2. Add the lardoons and fry until crisp then place into the simmering oven for 10 minutes 3. Return the pan to the heat and add the spinach until wilted and the liquid driven off. 4. Season and stir in a little thyme. 5. Cut the chicken breasts in half, place the bottom halves in a roasting tin and divide the spinach between them 6. Return the top part of the breast on top and spread with Mango chutney, dust with paprika and cook at the top of the Aga roasting oven for 15-20 mins. 7. To make the sauce scrape all the contents of the roasting tin into a saucepan, add the butter on place on the simmering plate. Whisk in the flour, add the port and cranberry juice, whisk and bring to the boil. 8. Add the mango chutney and reduce a little, check seasoning, and serve.

Handy Hint: Cooking Pasta in the Ovens We all know about the 7-10 minute principle for cooking on the tops of an Aga. We must keep the lids down as much as possible. You may think, however, that items like pasta can only be cooked on the top. Not so! If you boil your pasta in well salted water in a large open pan on the boiling plate for 3 minutes and then transfer, covered, to the simmering oven for a further 7minutes
