Recipe of the Month

This recipe is taken from Marcia's demonstration on the 1st of July, Summer Suppers. These cakes are delicious on a hot summer's day, especially with a nice glass of wine!

Crab and Sweet Potato Cakes
3 red peppers halved, deseeded and thinly sliced 5 tbsp olive oil 1 tbsp honey 2 tbsp balsamic vinegar 500g / 1 lb 2 oz sweet potato 4 tbsp vegetable oil 150g / 5 oz white bread, crusts removed, cut into chunks 25g / 1 oz basil leaves, torn 2 dressed crabs juice and zest of 2 limes ¼ tsp smoked paprika 1 large egg
Place the peppers in a saucepan with 3 tbsp olive oil, 4 tbsp water and the honey and vinegar. Bring to the boil and cook for about 3 minutes and then place in the simmering oven and cook until tender. Bring to the boil again and reduce the liquid until all has evaporated. Meanwhile, peel the sweet potatoes, cut into chunks. Heat the oil in a small roasting tin add the potatoes and then place in the roasting oven for about 20 minutes or until tender. Whiz the bread in a processor with the basil and remaining olive oil and season and place on a plate. Mash the potatoes and leave to cool. Once cool add the crab, lime juice and the zest and the paprika. Mix well together well and season. Divide the mixture into 4 rounds make a hole in the centre and then force in a quarter of the red pepper mixture. Seal up the gap and then coat in egg and the breadcrumbs. Chill well and then fry on the floor of the roasting oven  in a frying pan turning once until heated through and nice and crisp.
Serve with paprika mayonnaise and a green salad. Serves 4
